Whether hot or cold, sweet or savory – the avocado has become a popular fruit in modern cuisine. It not only convinces with its taste, but also contains the two important minerals magnesium and potassium, which are essential for the function of our muscles and nerves. The high content of unsaturated fatty acids also gives avocados their power. With our avocado recipe you can enjoy the super fruit topped with eggs, warm from the oven.
For 4 servings:
– 2 avocados
– 2 tsp olive oil
– 150 g smoked salmon
– 4 eggs
– ½ red onion
– 2 stalks parsley
Step 1: Wash the avocados, cut them in half and remove the seeds. Then brush the cut surfaces with a little oil and enlarge the cavities using a spoon. With the removed flesh you can try, for example, our avocado cookies.
Step 2: Place the avocados side by side in a greased baking dish, season with salt and pepper and line the cavities with a slice of smoked salmon. Bake the avocados at 180 degrees convection for 20 minutes. Meanwhile, prepare 4 eggs as a fried egg in a pan.
Step 3: Peel the onion halves and cut them into strips. Wash and dry parsley and cut into strips.
Step 4: Remove the avocados from the oven, place the fried egg on top, sprinkle with the onion and parsley strips and arrange everything together.
