May it be a little healthier? These indulgent cauliflower taters are a healthy alternative to potato pancakes, while being at least as delicious! See for yourself by recreating this super simple recipe.
For 4 servings
– 400 g cauliflower
– 150 g parmesan
– 2 eggs
– 1 pinch of pepper
– 1 pinch of salt
– 1 pinch of nutmeg
– 15 g chives
– 15 g parsley
– 15 g cress
– 15 g dill
– 400 g curd cheese
– 100 ml milk
– salt
– pepper
Step 1: Preheat the oven to 200°C (top and bottom heat). Wash the cauliflower and then grate it into fine pieces. Chop the parmesan into coarse pieces and then mix together in a bowl with the cauliflower, eggs and spices.
Step 2: Line a baking tray with baking paper. Form 6 equal-sized taler from the resulting mixture. Once they are all placed with enough space on the baking sheet, bake the thalers in the oven for 20-25 minutes until golden brown.
Step 3: For the herb curd, chop the washed herbs. Mix the curd and milk in a bowl and season with herb salt and pepper. Finally, fold in the herbs and the delicious herb curd is ready.
