You love salmon and want to try it in a completely different way?
With this low carb salmon spinach casserole, it’s easy!
For 2 servings
– 250 g fresh salmon fillet
– 250 g frozen spinach leaves
– 150 g cream cheese
– 50 g gorgonzola
– 1 shallot
– 1 clove of garlic
– 1 tsp butter
– ½ tsp salt
– 1/8 tsp pepper
Step 1: Finely dice the garlic and shallot and place in a saucepan with the butter. Sauté both over medium heat for about 1-2 minutes until translucent.
Step 2: Now add the spinach and cream cheese. Then let everything simmer for 7-8 minutes until the frozen spinach is thawed.
Step 3: Preheat the oven to 180°C (top and bottom heat).
Step 4: Add the Gorgonzola to the spinach together with the spices and simmer for another 2-3 minutes until the Gorgonzola has melted.
Step 5: Next, place the spinach in a suitable baking dish and then place the salmon fillets on top of the spinach.
Step 6: Finally, bake the casserole in the oven for about 20 minutes until the salmon is cooked.
